Paleo Chocolate Cupcakes

These chocolate paleo cupcakes are an easy grain free dessert option.  A healthy dessert made with simple real food ingredients.  The best part of homemade cooking is that you can eat all your favorite foods in a healthier more wholesome ingredients.   These easy gluten free cupcakes are made without refined sugars, low quality oils, and food coloring. 



Gluten Free Chocolate Cupcakes

Gluten free cupcakes and cakes are sometimes either too dry or too mushy.  Almond flour is one of the easiest gluten free flours to work with.  However, it can be heavy and a bit dense.  Luckily, these are super light and fluffy.  Coconut flour absorbs liquid very well, that’s why the recipe calls for a few eggs.  They don’t taste “eggy” which is kind of a deal breaker around here!  Typically, letting the batter sit for a little helps the coconut flour absorb the liquid and yield a perfect cupcake. 


Coconut Flour Cupcakes

Coconut flour is high in fiber and low in carbohydrates.  Baking or cooking with coconut flour is common when following a nut free diet.  It’s diabetic friendly, helps digestion, and doesn’t taste very much like coconut.  It has a bit of sweet taste, but it’s mild enough to add it into sauces, dips, etc. for a nice consistency.

The GAPS diet can seem dauntingly difficult and almost impossible.  Nourishing must mean no sweets right?  Well, these cupcakes are full gaps, and there is no reason to not enjoy treats every once in a while.  

GAPS intro is nourishing and exciting.  But, sometimes soup just doesn’t cut it.  When you want a guilt free treat regardless of what dietary preferences GAPS friendly treats are healthy for everyone.  Of course, you still have to keep allergy restrictions in mind, but they are starch free and lightly sweetened real food snacks.  


Grain Free Chocolate Cupcakes

Whether you are doing an elimination diet or staying away from grains forever, grain free baking and cooking can be difficult.  Luckily, this recipe is a no fail, easy staple.  We used the organic coconut flour from Natural Grocers.  Also, we’ve tried this with Bob’s Red Mill and other brands.  The freshness and quality is more important than brand, so don’t go too crazy looking for the best coconut flour!

Paleo Grain Free Chocolate Cupcakes
Serves 12
Paleo chocolate cupcakes made with coconut flour. These are dairy free and gaps friendly chocolate cupcakes that are always a hit!

  1. 4 eggs
  2. 1/2 cup coconut flour
  3. 1/2 cup cacao powder
  4. 1/2 cup maple syrup or honey
  5. 1/3 cup coconut or avocado oil
  6. 3 tablespoons of your favorite milk
  7. 1/2 teaspoon vanilla extract
  8. 1/2 tsp baking soda
  9. 1/2 tsp baking powder
  10. 1/2 tsp salt
  1. Preheat your oven to 350F and line your muffin pans with parchment paper or cupcake liners.
  2. (By hand) In a mixing bowl whisk the eggs, vanilla, and salt. Add coconut oil and combine. Add the coconut flour, cacao powder, and baking powder. Let the coconut flour absorb the liquid, and stir well.
  3. (In a food processor) Add all ingredients and pulse.
  4. Fill liners 3/4 full.
  5. Bake cupcakes for 15-20 minutes at 350F.
  6. Remove from oven and let them cool for a few minutes before you move the cupcakes to a cooling rack.
  7. Cool completely before frosting.
