Butternut squash fries are a tasty alternative to potato fries.  Aside from being lower in carbohydrates and calories, butternut squash is easier to digest and has a varied nutritional profile. 

Fries are universally known as unhealthy.  Usually, they are! If you are buying packaged fries, the ingredient label probably reads canola, sunflower, or safflower oil.  This is aside from the oil that you need to fry.  Please do not cook your fries in these oils!  They are the reason eating fat is known as unhealthy.  See more about PUFA’s here.  Avocado oil is a healthy alternative and food fries beautifully!

Baked Butternut Squash Fries Recipe 

These fries are baked but you can fry them as well.  To keep it vegan friendly, fry in avocado oil.  It’s better than olive oil for frying and the fries cook evenly and crisp perfectly.   

When baking butternut squash make sure to keep an eye or it will begin to burn quickly.  This happens when some fries need more oil or they are thinner from the tips because of the odd shape of butternut squash. That’s exactly what happened with some of these!  I just left them because I had already arranged the rack when I decided the fries needed more oil.  

Use a basting brush and some of the oil left in the mixing bowl (or mix another little batch of oil and spices) and brush the pieces that begin to charr.

GAPS Butternut Squash Fries Recipe 

If you are following the GAPS diet or another diet requiring high fat you can use lard, butter, or tallow.   

Butternut Squash Fries
Serves 4
An easy recipe for butternut squash fries. Bake these in your choice of fat stick to avocado oil for the healthiest vegan version of these fries!

Ingredients
  1. 1 butternut squash
  2. 1/2 tsp sea salt
  3. 1/2 tsp black pepper
  4. dash of italian seasoning, paprika, or other spices
  5. 3 tablespoons avocado oil
Instructions
  1. Preheat oven to 400F.
  2. Prepare the fries. Peel butternut squash, slice in half lengthwise and scoop seeds out. Cut the butternut squash in half again, and cut into fries.
  3. Drizzle oil, salt, pepper, and spices, toss.
  4. Layer a rack over a baking sheet.
  5. Arrange the fries on the rack and bake for about 35 minutes.
  6. Serve immediately.
