Easy Barbacoa Recipe

The spiralized bell peppers add flavor and texture to the dish.  If you don’t have a spiralizer you can simply chop up your veggies.  However, the spiralizer really saves time and effort and makes vegetables more interesting.  Having tried various spiralizers the Inspiralizer is by far the best. It look less than 2 minutes to spiralize the onion and bell peppers for this easy barbacoa recipe.

Barbacoa meat over vegetable noodles, topped with a quick guac. 3 different cooking methods: stovetop, instant pot, and slow cooker.

For the Barbacoa Meat
  1. 1 Beef Chuck Roast (3-4lbs)
  2. 1/4 cup filtered water
  3. 1 large onion
  4. 2 tomatoes
  5. 4 garlic cloves
  6. 2 tablespoons tomato paste
  7. 3 teaspoons salt
  8. 1 teaspoon crushed black pepper
  9. 1 teaspoon dried oregano
  10. 1 bay leaf
For the vegetable noodles
  1. 1 red bell pepper
  2. 1 green pepper
  3. 2 cups green cabbage
  4. 1 medium yellow onion
  5. 1 tablespoon coconut oil or avocado oil
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon black pepper
For the guac
  1. 2 ripe avocados
  2. 1/2 cup tomato
  3. 1/4 cup finely chopped onion
  4. 1 jalapeño minced
  5. 1 lime, juiced
  6. 1/2 tsp salt
For the barbacoa meat
  1. Add all ingredients to a stockpot.
  2. Cook over a low simmer. See notes below for cooking times*
  3. Once the meat is tender, shred it using two forks.
For the vegetable noodles
  1. Spiralize the green and red bell peppers, cabbage, and onion. Use a spaghetti noodle cut.
  2. Heat up a skillet over medium heat. Add in the cooking oil using.
  3. Sauted the spiralized vegetables until tender, about 5 minutes.
For the guac
  1. In a bowl, scoop the avocado, and mash with a fork.
  2. Finely chop the tomato, onion, and jalapeño, and mix into the avocado.
  3. Season with salt and pepper. Add in the lemon juice.
Cooking time for barbacoa meat
  1. Stove top 6-8 hours.
  2. Instant pot 60 minutes
  3. Slow cooker 8 hours
