The Kinda Easy Bacon Wrapped Jalapeño Poppers

Bacon wrapped jalapeño poppers are one of our favorite appetizer/ snack in our house.  We don’t even abide by the rule of appetizers, we will have these cheese bacon jalapeños as a side or snack! 

Too spicy?  Not always! 

The heat of the jalapeños is usually a hit or miss, I always remove all the seeds but just as a fair warning they can still be very spicy even after cleaning them out.  Yellow jalapeños are milder, so if you want less heat you can use these instead.  

Crispy Bacon, A MUST! 

For crispy bacon wrapped jalapeños I always bake them at high heat.  If you’re already on the grill, you can also grill these.  I notice the bacon is not always as crispy when grilled.  

I find the best method is baked, then finished off for a few minutes on broil.  The cheese gets all crispy and golden between the bacon, yum.   The only downside to the broiling option is the melted off cheese burns up quickly!  If you don’t check on them often you won’t be able to eat the crispy cheese around the peppers.  I like to remove that cheese crisp before broiling, and snack on it while I wait for the peppers although you *could* save it to top the jalapeños with more cheese.  I can’t…

You can use a variety of cheese for stuffed jalapeño.  I prefer cheddar cheese, but I promise I’ll be back with a dairy free recipe soon.  Fingers crossed!  You can always check your dairy free section at the grocery store for more options.

  1. 6 jalapeño peppers
  2. 6 slices bacon strips
  3. 4 oz cheese (cheddar, mozzarella or any kind that melts)
  1. Slice the jalapeño peepers in half, length wise, and remove the seeds.
  2. Cut the cheese into small pieces that can fit inside the peppers, or use shredded cheese.
  3. Slice the bacon strips in half, I like to slice them lengthwise because the thinner strips are easier to wrap around...
  4. Set the oven to 375F (no need to preheat)
  5. Bake the peppers for 20-30 minutes until bacon is fully cooked.
