GAPS Diet Meatball Soup Recipe

If you’re familiar with the GAPS protocol, you know soups are a staple meal regardless of what stage you are on.  I love this recipe for intro stages, so filling and flavorful!  

You know those awesome clean your fridge recipes, where you can just whatever vegetables you have on hand before they go bad, well this is one of those.  I basically never use the same ingredients, so if you have any questions as to what works drop a comment below.  

You can substitute cauliflower rice for rice or vice versa!

What kind of meat to use? 

You can use ground beef or pork, even mix half and half.  If you can source grass fed or pasture raised meats, they are always the better choice in quality and environmentally.  If you don’t have access to local farms Whole Foods often does a sale on their pasture raised ground beef for $3.99/lb!  Stock up!

Easy Albondigas Recipe, Meatball Soup!

Easy Meatball Soup, "Albondigas"
A traditional meatball soup recipe, also known as caldo de albondigas. Grain free & GAPS friendly!

  1. 1 lb ground beef
  2. 1 large egg
  3. 1/2 cup cilantro, finely chopped
  4. 1/3 cup green onion, finely chopped
  5. 2 cups cauliflower rice OR 1 cup white rice
  6. 1 cup broccoli florets
  7. 2 carrots, coarsely chopped
  8. 1 zucchini, coarsely chopped
  9. 3 celery stalks, chopped
  10. 2 tablespoons tomato paste
  11. 2 quart filtered water
  12. 1 quart stock or bone broth* (or sub for more water)
  13. 2 teaspoons sea salt
  14. 1 teaspoon paprika
  15. 1 teaspoon dried oregano
  16. 1 teaspoon black pepper
  17. 1/2 teaspoon turmeric
  1. Prep the vegetables according to the ingredients list.
  2. In a large mixing bowl, add the ground beef, cilantro, green onion, 1 teaspoon sea salt, and 1 teaspoon paprika (or less). Add in the egg and mix evenly.
  3. In a stock pot, add the water and bring to a boil.
  4. Add in the chopped carrots, zucchini, celery, and broccoli, cauliflower rice, and simmer over low heat.
  5. Meanwhile the vegetables begin to cook form the meatballs with the meat mixture.
  6. Slowly add in the meatballs into the simmering soup one by one to prevent them from falling apart.
  7. Season with the remaining sea salt (1 teaspoon), black pepper, turmeric, dried oregano, and add in the tomato paste.
  8. Simmer with lid over stock pot until meatballs are fully cooked, about 5-10 minutes.
  9. Serve and garnish with extra cilantro and fresh lime.
  1. The rice can be substituted for either white rice or cauliflower rice.
  2. *You can add in as many extra vegetables!
