An easy recipe for raw coconut macaroons.  One of our favorite kinda easy recipes because of how fast you can make these and change up the recipe.  Add 1 tablespoon cacao powder for chocolate macaroons, sprinkle coarse salt, etc.


These raw coconut macaroons are a bit different than the classic baked coconut macaroon.  They are the perfect way to indulge your sweet tooth with a healthy treat.  Our easy chocolate chip cookie dough macaroons are the perfect treat to indulge your sweet tooth while eating something healthy and free of refined sugar. 

Chocolate Chip Macaroons

This version of chocolate chip macaroons takes less than 5 minutes to make.  Plus, these coconut macaroons don’t stick to your baking sheets.  Silicone baking mats, and parchment paper make the clean up process easier but they are completely optional.  


Easy Macaroons Recipe

These easy coconut macaroons are acceptable with most restrictive and/or special diets.  Unless, of course you are allergic to coconut.  But, for a low fodmap, gaps, and paleo diet you can enjoy this sweet treat without worrying if it is legal or not.  In particular, people with IBS and poor gut health find themselves following the above diets for digestive relief.  Traditional baked goods, snacks, and other treats usually contain sugar, starches, and other ingredients that affect healthy digestion.

Low Fodmap Treats

If you are following a low fodmap limit yourself to a few.  1/4 cup of shredded coconut is ok for a low fodmap diet, anything over 1/2 cup can cause symptoms for those who malabsorb polyols.   


Healthy Coconut Macaroons

These healthy coconut macaroons are completely raw and vegan.  The coconut oil adds a dose of healthy fat and combined with the maple syrup helps the macaroons stay formed.  Also, you will notice these will soften if left out, place back into refrigerator if this happens and enjoy later.


Chocolate Chip Cookie Dough Macaroons

Raw coconut macaroons for an easy and healthy treat. Make these chocolate chip cookie dough macaroons in under 5 minutes, and offer a vegan, egg free and allergen friendly treat to your friends and family.

  1. 1 cup shredded coconut (unsweetened)
  2. 1/2 cup almond flour
  3. 1 tsp vanilla extract
  4. 2 tablespoons coconut oil
  5. 2 tablespoons maple syrup
  6. 1/3 - 1/2 cup chocolate chips
  1. Place coconut, almond flour, maple syrup, and coconut oil in food processor or stir virously in a mixing bowl until well combined.
  2. Fold in chocolate chips.
  3. Pack mixture into an ice cream scoop, and scoop onto a parchment paper lined cookie sheet.
  4. Refrigerate until set, about 20 mins, remove from cookie sheet and add to a jar with lid or another air tight container.
  1. optional: melt chocolate chips and dip macaroons or drizzle chocolate then refrigerate one more time for the chocolate to harden
